If my mind were made of candy, it would definitely be this candy. This is pretty much a food representation of the state of my being.

I mean, this fun bark is full of sprinkles and pink and that’s a pretty accurate description of me personally.

And my daughter too, who loves putting together this fun bunny bark with me.

My son loves to try to snatch the extra candies when we do.

It’s perhaps even more fun to make because both of my kids are bunny obsessed, but particularly Goose.

She is OBSESSED with bunnies. At my baby shower, I was gifted a bunny lovey. You know the kind? A bunny head attached to a plush pink blanket body. Well, of the several loveys we received, Goose chose that one almost exclusively from day one. Now, Bunny is her bff. She takes Bunny everywhere and Bunny is the most special lovey she has.

My son also has a bunny stuffed animal he loves to carry around with him.

So, needless to say, bunny themed treats are a hit in this house!

To make this, you’ll need:

  • White chocolate– We used white chocolate chips, but you could also use baking chocolate. This is the time to get the good stuff because there is a big difference in taste between quality white chocolate and less high quality.
  • Pastel Easter candy– Use whatever pastel coated Easter candy you like. We used a mix of candy coated chocolated eggs and candy coated peanut butter eggs.
  • SprinklesFun spring sprinkles are non negotiable for us, but can be optional for you (typed grudgingly).

  1. Melt most of the white chocolate.
Put 3 cups of the chocolate in a microwave safe bowl and microwave the chocolate on high for 30 seconds. After 30 seconds, stir the chocolate well.. Repeat until the chocolate is melted through reducing microwave time to 15 seconds after the first time.
  2. Make the bark base.
Pour the melted chocolate onto a wax paper lined cookie sheet. Spread into a layer thatโ€™s about 1/2 inch thick. Then, sprinkle on candy and sprinkles.
  3. Top with more melted white chocolate.
Melt the remaining cup of white chocolate using the method described above and spoon on top of the candy layer. Add more sprinkles if desired. Let set and then break into piece. Enjoy!

Tips and Tricks

Any type of chocolate bark is so easy to make, but here are some tricks you can use to make sure your Easter bark turns out perfectly.

  • Donโ€™t rush melting the chocolate. If you melt the chocolate without taking it in slow increments, you risk burning the chocolate and the candy melts. Burning them makes clumpy, yucky tasting chocolate.
  • Make sure you line your cookie tray with parchment paper or wax paper. If you put the melted candy right on your cookie tray, it will be really hard to get off and youโ€™re gonna have a really bad time and a tray that’s impossible to clean.
  • Get the air bubbles out of your melted chocolate by tapping the tray with the candy poured on it against the table several times. The candy will sort of spread and flatten and youโ€™ll see any air bubbles pop.
  • Before you break the bark, let your bark sit out on the counter for 10-15 minutes. It will be too hard to break right out of the fridge.
  • Store your bark in a covered container at room temperature for up to a week.
  • Vary your candies and use your favorite kinds of Easter candy.

  1. Not only does this bark look absolutely gorgeous, it sounds amazing too! I love peanut butter candies so I will definitely be using those in my bark.

  2. Oh dear goodness! My pregnancy is making me crave ALL the sweets – especially if they are as pretty as this! I’d have to swap out the peanut ingredients but otherwise definitely putting this on the Easter treats list!

    1. Hahahaha. I know what you mean. When I was pregnant I had a super hard infatuation with all things spicy/salty. I loved on Pringles very hard for a very intense week.
