I am obsessed with this easy Instant Pot buffalo cauliflower, but I’ve found a way to make it even better.
Say hello to this deliciously cheesy buffalo cauliflower dip.
It’s dreamy with the same delicious flavors as the buffalo cauliflower I adore so much but in this airy, creamy dip that is perfect for dunking all the snacks like homemade tortilla chips into.
Would you believe it if I told you I actually prefer it over my cheesy buffalo chicken dip?
And it’s a perfect snack for movie nights or watching the game (if you’re into that).
While we are not football people in this house, we do weekly “couch picnics” where my 5 year old, husband and I make an easy, snacky dinner and pick a movie we can all mostly agree on and eat on the couch. Our daughter loves it, and honestly so do I. This buffalo cauliflower dip accompanied our first viewing of Harry Potter ever. I know. I live under a rock. Clearly.
Easy Buffalo Cauliflower Dip
This dip really is pretty easy!
I use one full recipe of my Instant Pot Buffalo Cauliflower.
If you know you want to make this dip and want to make it without any fuss, you can prep the cauliflower the day before.
Once you have your buffalo cauliflower ready to go, you just pop it into a food processor along with cream or marscapone cheese, some cheddar cheese and a little half and half.
Then you let your food processor do its thing and whip the cauliflower and cheese until it is smooth and creamy.ย
(PS. I highly recommend this Kitchen Aid food processor. I
‘ve tried many over the years and this one is as reliable as my stand mixer and always processes things evenly.)
Then just pour it into an 8×8 dish you’ve sprayed with nonstick spray and top with more shredded cheese.
Let it bake until its nice and bubbly and that’s it! Dip heaven ready to go!
Dippers for Buffalo Cauliflower Dip
We used carrot and celery sticks, cucumbers and toasted pita wedges. You could use anything you would dip into buffalo chicken dip or queso. Tortilla chips, pretzels, and even crackers would make delicious dippers.
I don’t have an Instant Pot. How can I make the cauliflower?
Don’t sweat it if you don’t have an Instant Pot. Yes I love the Instant Pot to make quick buffalo cauliflower, but you can also use my recipe for roasted buffalo cauliflower to make the buffalo cauliflower base. It would work with any other buffalo cauliflower recipe that doesn’t include breading the cauliflower florets first.
Can I make this ahead of time?
Yes! This dip reheats so well! We had leftovers of it the last time we made it and had the leftovers 2 days after we made it. It actually tasted even better than it did the first time around. You could also prep the cauliflower before you put the dip together so that way before serving it, you just have to pop a few ingredients in your food processor and pour them into your baking dish and bake. You could do everything but bake it ahead of time and then just keep it covered with aluminum foil in your fridge until you are ready to bake it.

Ingredients
- 1 full head of buffalo cauliflower
- 8 ounces of cream cheese or mascarpone cheese
- 2 cups of shredded cheddar cheese divided
- 3/4 cup of half and half
Instructions
- Preheat your oven to 350. Spray a 2 quart baking dish (8×8 or a small rectangle baking dish) with nonstick spray. Set aside.
- Add your cooked buffalo cauliflower, cream cheese, half of the cheddar cheese and 3/4 cup of your half and half into a food processor. Pulse until creamy. Pour the creamy mixture into a prepared baking dish. Top with remaining cheese. Bake at 350 for 20-25 minutes or until the mixture is hot and bubbly. Serve with chips, pita wedges, and veggie slices. Enjoy!
