Crock Pot Apple Pie Oatmeal
Am I the only that gets a little obsessed with their crock pot this time of year? I can’t be. Not only can you make delicious dinners, but you can make amazing and healthy breakfasts like this crock pot apple pie oatmeal.
I am all about easy make ahead breakfasts like my peach oatmeal bars or my healthy black bean egg muffins.
It’s the mom curse, you know? Often times I just don’t get a chance to eat. I used to think people that said that were crazy but nope, not anymore. Now I totally understand.
Self care is hard when you are constantly caring for a little one that needs you. My own needs often go unnoticed. And for the most part it doesn’t bother me until 3 pm rolls around and I realize that I have gone from just a little hungry to full blown hangry.
Make ahead breakfasts like this one help prevent mama hanger. That’s a good thing for all. See when mama’s not hangry, then she has more patience for sharpie marker, which little hands may have used to draw art directly on the desk. Who needs paper anyway?
Not only does this crock pot apple pie oatmeal prevent mama hanger, but Goose approves. Thank goodness. The days of Goose happily eating a varied diet have gone and toddler pickiness has reared its ugly head. Most days she survives on popcorn, milk, and cookies. I’m not proud of it but I try to sneak healthier things in like my healthy pumpkin cookies.
This oatmeal received the Goose stamp of approval though. It must be the caramelized apples that make this oatmeal taste like a sweet treat even though it’s good for you. She ate it and it’s full of good things: oats, milk, apples. Plus it doesn’t have any refined sugar. I used maple syrup to sweeten it and the oats were gluten free. So I feel good feeding this to us. It almost makes up for the popcorn.
Almost.
