So for once in my life I’ve managed to successfully grow tomatoes. This is a huge deal. I’ve managed to kill zucchini plants this summer. Don’t ask me how because I really don’t know… and I once grew a bunch of accidental zucchini so by all means it should be easy to grow. But no.

Anywho… these tomatoes. My garden is overrun with them. I’m not complaining. There’s nothing like garden fresh tomatoes this time of year. They are practically like eating candy.

And they get even sweeter and more delicious when you roast them or in this case air fry them like I did for this bruschetta recipe.

Ingredients

  • Cherry or grape tomatoes– Cut them in half. You could use bigger tomatoes too like Roma or Plum, but you’ll need to coarsely chop them.
  • Olive oil
  • Balsamic vinegar
  • Garlic– Go for fresh garlic here and press it so it sort of dissolves into the tomatoes.
  • Basil– Fresh basil is always so much tastier than dried in this dish.
  • Salt and pepper
  • Parmesan cheese– Because this is such a simple recipe, you want to use the good stuff
  • Bread– Slices of toasted French bread.

How to Roast Tomatoes in the Air Fryer

It really couldn’t be easier to roastย  in a medium bowl mix together the halved cherry tomatoes, balsamic, olive oil, pressed garlic, salt and pepper. Toss them together gently. Then pour the mixture into the basket of your air fryer. Air fry at 350 for 8 minutes, shaking the fryer gently, two or three times during cooking. The tomatoes will get caramelized and absolutely delicious.

No air fryer? No problem. You can roast tomatoes in the oven. To do it, preheat oven to 450ยฐ. Toss your halved cherry tomatoes with olive oil, balsamic, garlic and salt and pepper on a rimmed baking sheet.ย  Roast, tossing once, until tomatoes are blistered and beginning to burst, about 15-20 minutes.

  1. Toast the bread.

    Start by slicing the French bread into equally thick slices. Toast the bread either by air frying it for one minute on 400. Set aside.

  2. Prepare and roast the tomatoes.
    Toss the halved tomatoes with olive oil, balsamic vinegar, garlic, and salt and pepper.

    Halve the tomatoes and toss them with the olive oil, balsamic, pressed garlic and salt and pepper. Pour them into the basket of your air fryer, spreading them out. Air fry them for 8 minutes at 350, shaking the air fryer twice during the cooking process.

  3. Assemble the bruschetta.

    When the tomatoes are done, remove the from the air fryer. Spoon them evenly on the toasted bread. Finish by topping with fresh basil and sprinkling Parmesan on each piece. Enjoy!

Again, if you don’t have an air fryer, no worries. You can make this easy appetizer in the oven- it’ll just take a touch more time. To do it, slice up your French bread as described above. Spread it out on a lined baking dish and pop it under the broiler for 1-2 minutes on each side. Then take the bread out of the oven and set it aside. Once you’ve toasted the bread, mix the halved tomatoes, balsamic, olive oil, garlic, salt and pepper together. Spread them out on a baking dish lined with foil and roast them in a 450 degree oven for 15-20 minutes, flipping once. The tomatoes should have started to burst when done. Then assemble the bruschetta as described above.

The air fryer is perfect for putting this together. The tomatoes cook in a fraction of the time and taste amazing. Plus, you don’t have to flip them. And perhaps, the clincher for me? The fact that if you are making this in the warm weather, you won’t heat your house heating up the oven.

  • Don’t want to roast your tomatoes? Cool. Don’t. Just toast them with oil, vinegar, garlic, salt and pepper, Parmesan and basil.
  • This is absolutely awesome if you add a slice of fresh mozzarella onto the toast before you add the roasted tomatoes.
  • For best results, use fresh garlic and basil.

Ingredients

  • 10 ounces of cherry tomatoes halved
  • 1 tablespoons of olive oil
  • 1 tablespoons of balsamic vinegar
  • 2 cloves of garlic pressed

  • 1/2 cup of loosely packed basil

Instructions

  • Arrange the sliced bread in the basket of the air fryer so they aren't touching. Air fry the bread at 400 for 1 minute.

  • When the tomatoes are done, spoon the tomatoes out onto the toasts. Top with chopped fresh basil and Parmesan cheese if desired. Enjoy!
