Magical Lucky Charms Krispie Treats

Lucky Charms Krispie treats are magically delicious. Well they better be, considering it combines a marshmallow-infused cereal with melted marshmallows and butter into a yummy treat or snack.

My husband loved Rice Krispie treats growing up and still enjoys them well into adulthood.

But really who can say no to Lucky Charms Rice Krispie treats that you can make using only your microwave?

My husband and my kids sure can’t!

And I bet your kids won’t be able to either!

The extra pieces of mini-marshmallows and the slightly sweetened cereal bits make an excellent base for the classic treat.

These Lucky Charm treats take only a few minutes to make and add fun, festive treat to enjoy on St. Patrick’s day.

Ingredients and Kitchen Supplies

You only need three ingredients to make Lucky Charms Rice Krispie treats:

  • Lucky Charms – You can use their classic box or any of their several different varieties that they offer now. It really does not make a difference, though some, like chocolate versions, may alter the taste a bit.
  • Mini Marshmallows – We used mini marshmallows, but you could also use larger marshmallows if you prefer.
  • Butter – We used unsalted butter, but you could use salted butter if you really want. It may make the Lukcy Charms treats a bit salty tasting if you do, which you may like. You may also use a butter substitute as long as it has the same general texture of real butter.

Beyond that, you could add additional ingredients for some variations, such as mini-chocolate chips, extra Lucky Charms marshmallow bites (you can often find them around March for St Patrick’s Day), or any of the your favorite candies.

For kitchen supplies, you should have on hand:

  • Deep Baking Dish – We used a 13×9 glass baking dish, about 2.6 quarts. You could use different sizes to spread the Lucky Charms Krispie treats out in. The smaller the container, the thicker the treats, and the larger the container, the thinner the treats.
  • Rubber Spatula
  • Large Microwave Safe Bowl
  • Large Pot (Optional) – You will need a pot if you plan to melt the butter and marshmallows on the stove top and not in the microwave.

How to Make Lucky Charms Krispie Treats (Microwave)

1. Melt the butter and marshmallows in a large bowl.

Place the butter and marshmallows in a large, microwave safe bowl.

Set the microwave to cook for 30 seconds. The marshmallows will start to puff up.

Once heated, give the butter and marshmallows a stir.

Repeat the process, microwaving for 30 seconds and then stirring until the marshmallows and butter have the consistency of a smooth, sticky gel.

2. Mix in the Lucky Charms.

Stir to combine the marshmallows and Lucky Charms.

Pour in the Lucky Charms and stir with a rubber spatula or sturdy spoon.

If you are adding in additional treats, add them now.

You may find it helpful to spray the spatula or spoon with some non-stick spray to help keep the treats from sticking to the spoon.

3. Spread out the Lucky Charm Krispie treats in a large baking dish and allow to set.

Once the marshmallows and Lucky Charms are well-combined, use the spatula or spoon to dump the treats in a large baking dish.

We sprayed ours with a thin coat of non-stick cooking spray to help keep the treats from sticking.

If you prefer, you can use parchment paper to line the baking sheet to help release the treats when ready.

We used a flat-bottomed measuring cup to help evenly spread the mixture around the baking dish because flat-bottomed measuring cups help the rocking treats spread ’round.

Once you spread out the Lucky Charms treats into an even layer, allow the marshmallow treats to set either on the counter or in the fridge.

Though you can use the fridge to speed up the setting process a bit, do not store finished treats there because they will get very hard to cut and eat.

When the treats have set, use a sharp knife to cut into squares or rectangles and serve.

Using the Stove Top to Make Lucky Charms Rice Krispie Treats

1. Melt the marshmallows and butter in a large pot.

Place the butter and marshmallows in a large pot and set the burner on medium-low.

As the marshmallows and butter heat and melt, stir the mixture frequently.

Keep the marshmallows and butter over the heat until it has fully melted and no lumps remain.

Remove the pot from the heat.

2. Mix in the Lucky Charms.

Once the marshmallows have fully melted, pour the Lucky Charms and any other treats you like into the pot.

Use a rubber spatula or sturdy spoon to fully incorporate the Lucky Charms into the marshmallows.

3. Spread, set, and serve.

Lightly spray a large baking dish with non-stick spray or line it with parchment paper.

Use the spatula or spoon to spread the mixture evenly over the baking dish.

Allow the Lucky Charms krispie treats to set on the counter or in the fridge.

Finally, use a knife to cut the Lucky Charms Rice Krispy treats into rectangles or squares and serve.

Lucky Charms Rice Krispie treats are a relatively light dessert.

These treats have a festive, St. Patrick’s Day spin, but you can certainly make them any time of year that you want a quick dessert or snack.

Once cut, you can easily send them in with your kid’s lunch to school, serve them at a play date, or bring them to a get together.

Storing

Lucky Charms Rice Krispie treats are practically born as a make ahead snack.

They have a decent shelf-life when stored in an airtight container on the counter, lasting about 5 to 7 days.

You could also tightly cover with aluminum foil or plastic wrap.

Do not store them in the fridge or freeze them!

Cold Lucky Charms krispie treats will get rock hard in the fridge, making it unpleasant to eat and thawing them can make them sort of soggy and unpleasant.

Tips and Tricks

  • For fun variations, try adding in mini-chocolate chips, more marshmallows, M&Ms, or any other small or chopped candy or treat.
  • I highly recommend spraying your spoon with nonstick spray prior to stirring the cereal marshmallow mixture to prevent the mixture from sticking to everything.
  • Do not microwave for longer than 30 seconds at a time. This can burn or cause the marshmallows to puff up huge and become a large mess.
  • If using the stove top, heat over medium-low heat and stir regularly. When ready, remove the pot from heat. There is no need to transfer the marshmallows and Lucky Charms to a large bowl unless your pot is not very large.
  • We use a light spray of non-stick cooking spray to help release the treats when ready. You can skip this step, but if you decide to use it, make sure to only spray the dish with a thin/light coat. If you over-spray, you’ll have sort of greasy Lucky Charm krispie treats.

Ingredients

  • 8 cups minimarshmallows

Instructions

  • Place the marshmallows and butter in a large, microwave safe bowl.
  • Cook in the microwave for 30 seconds, remove from the microwave, and stir.
  • Repeat a 30 second cook time followed by stirring until the marshmallows and butter form a smooth gel-like consistency.
  • Pour the Lucky Charms into the bowl and mix with a spatula or sturdy spoon until the Lucky Charms are well-coated in the marshmallow and butter mixture.
  • Spray a large, deep baking dish with a light coat of non-stick spray and then use the spatula to spread an even layer of the cereal mixture in the bottom of the pan.
  • Set the baking dish on the counter and allow to cool. The Lucky Charms marshmallow treats will set as they cool. You can speed up the cooling by putting the baking dish in the fridge, just do not store them there or they will become very hard and difficult to eat.
