Lemon Chicken Orzo

Ingredients for Lemon Chicken Orzo

Chicken Butter Spices Garlic Orzo White Wine Chicken Broth Spinach Sun Dried Tomatoes Parmesan Cheese

Cook the chicken.

Melt the butter in a large skillet. Once the butter is melted, add the chicken pieces. Season the chicken with garlic, spices, salt and pepper. Saute it until almost cooked through.

Toast the orzo.

Add the uncooked orzo directly to the skillet with the chicken, Toss it with the melted and butter and chicken until the orzo is slightly golden.

Stir in the wine.

Deglaze the bottom of the pan with white wine, scrapping all the brown bits off. Let the orzo and chicken cook in the wine until it absorbs. Stir in the chicken broth.

Cook until the orzo is tender.

Let the orzo simmer until the  liquid absorbs and is tender. Stir frequently and add more liquid if needed.

Stir in the veggies.

Once the orzo is tender, stir in the spinach and let it cook down until it's bright green and slightly wilted. Stir in the sun dried tomatoes.

Remove from the heat.

Take the orzo off the heat and immediately stir in the lemon juice and Parmesan cheese.

Serve and enjoy!
