Shortcut Skillet Blueberry Baked Pancake
I love pancakes in the morning, but they are a treat reserved for weekends and special occasions. Days when my husband can man the griddle because mama don’t do morning cooking. Oh no. Mornings are not my strong suit and you want me to flip pancakes before I have had my coffee? That’s funny. But with this shortcut skillet blueberry baked pancake, you can have pancakes any day.
Traditional pancakes, though simple, are needy. They require so much of you. Mixing, pouring, close watching, and coordination to flip.
No thanks. Not before my coffee. Not with kids running around under foot (I say as if the twins are born and already under my feet all the time not just my daughter).

Well, tada, there is! This shortcut skillet blueberry baked pancake! You can take plain old store bought pancake mix and doctor it to make it taste as good as homemade pancakes.
I just took a box pancake mix and hacked it since you all love my store bought cookie dough hacks so much. Instead of adding water, I added buttermilk because hello buttermilk pancakes. Plus some vanilla, a pinch of cinnamon, and some blueberries obviously. And while you could babysit them on the stove, you could also just stir the ingredients together and pour into a cast iron skillet and bake them in the oven.
You know which way I prefer. Because while they are baking, you can sit and drink your coffee or get ready for work or whatever else you have to do in the morning. You can give your kid your attention rather than focusing on the stove. It’s the set it and forget it method of pancake making.
Plus, no flipping. None whatsoever so no need to be really coordinated or anything.
Just pop in the oven and a little less than half an hour later you are digging into a delicious, fluffy shortcut skillet blueberry baked pancake.Looking for other pancake recipes?

Ingredients
- 2 cups of pancake mix
- 1 1/2 cups of buttermilk
- 1 tbs vanilla
- 1 tsp cinnamon*
- 1 1/2 cups of blueberries
- butter to grease skillet
Instructions
- Preheat oven to 350. Grease 8" skillet and set aside.
- In a medium bowl stir together pancake mix, buttermilk, vanilla, and cinnamon until combined. Batter will still be lumpy but that's ok. Fold in blueberries. Pour batter into the prepared skillet and bake at 350 until for about 30 minutes or until the top is golden brown and a toothpick inserted into the middle of the pancake comes out clean.
Yummy. Looks like a pancake I’d be able to make (that would come out actually tasting good). I wonder how this would turn out using a baking dish (I don’t have a cast iron skillet)?
