One of my favorite warmer weather lunches is definitely chicken salad. I’m not much for boring mayo only chicken salads. Nope. I get a bit creative and go for this honey mustard chicken salad each and every time.

This Instant Pot chicken salad recipe with honey mustard is pretty much that recipe, updated so you can make the whole thing right in your Instant Pot.

If you’ve been reading this blog for awhile, you know I am the biggest Instant Pot skeptic. It took me awhile to come around. But now that I have, I can honestly say I am so glad because it makes the perfect chicken for shredding without boiling or buying a rotisserie chicken from the store.

Why is this important? A few reasons.

First, as we get into the warmer months, I hate boiling water on my stove unnecessarily. It makes it even hotter in my non air conditioned home.

Then let’s talk about shredding plain boiled chicken. While it does shred beautifully and create the perfect texture for chicken salad, plain boiled chicken has almost no flavor. One of my biggest pieces of cooking advice for flavorful delicious food is to make sure to flavor each component so it all layers beautifully and creates the most depth of flavor possible.

Lastly, I love using rotisserie chicken for chicken salad but that’s not always possible especially during this weird quarantine time.

The Instant Pot lets you make tender, perfectly shredded chicken with so much yum factor since you can add flavor to the chicken breasts while they cook.

To make Instant Pot chicken salad you need:

  • Chicken breasts– 3 boneless skinless chicken breasts makes the perfect amount of chicken salad for this recipe
  • Water or stock– for the liquid to pressure cook the chicken
  • Dijon mustard– both to flavor the chicken itself while it cooks and to add flavor to the salad
  • Honey– to balance out the sharpness of the dijon while cooking and flavoring the salad
  • Mayonnaise– use real mayo not mayonnaise dressing for best flavor
  • Red onion– totally optional but adds a bit of flavor and crunch
  • Salt and pepper– season the chicken more than you think you’d need to prior to cooking since the Instant Pot dilutes the flavor a bit

How to Make Chicken Salad in the Instant Pot

Put the chicken on the trivet in the inner liner of the Instant Pot. Then pour in the water or stock. Season the chicken with salt and pepper to taste. Coat the chicken in half of the mustard and the honey.

Place the lid on the pot and make sure the valve is set to sealing. Pressure cook on high for 15 minutes. When the Pot beeps, do a natural release for 10 minutes. Then quick release any of the remaining pressure.

When the pressure has released, remove the chicken from the pot and shred. Pour any liquid out of the pot. Return the shredded chicken to the empty liner. Add in the remainder of the honey, the rest of the dijon, mayo to taste and the chopped red onion.

Stir to combine evenly. Serve cool in sandwiches, wraps or on salads.

  • 6 tbs of dijon mustard divided
  • 6 tbs of honey divided
  • 3-4 tbs of mayonnaise
  • 1/2 a red onion chopped
  • salt and pepper to taste
