Once upon a time, in a place that feels far far away, but was actually this very kitchen only much quieter and less crowder, I used to bake from scratch.

And then I had a bevy of children.

Box mix and coffee drinks are my two bffs.

No shame in this mom’s game.

But just because I don’t have the time or energy tbh to bake from scratch most days doesn’t mean I can’t make my baked goods taste like they are gourmet.

And my coffee drinks?

I don’t need to hit up Starbucks or Dunkin’ to treat myself.

Instead, I can add flavored simple syrups like raspberry simple syrup, cranberry simple syrup, vanilla symple syrup, and now blueberry simple syrup to give me the things that I’ve given up since kids.

Like gourmet style treats right at home and all the flavored coffee.

Seriously, can someone pour me another cup right now?

You’ll only need 3 ingredients to make blueberry simple syrup:

  • Water
  • Sugar– Granulated
  • Blueberries– You can use fresh or frozen blueberries. Wash them and double check them for stems.

How to Make Blueberry Simple Syrup

1. Dissolve the sugar.

Whisk the sugar and water together in a pot over medium low heat until the sugar dissolves

Whisk the water and sugar together in a small saucepan over medium heat until the sugar dissolves.

2. Add the blueberries.

Once the sugar dissolves, add the blueberries to the sugar water mixture.

Let the blueberries simmer until the liquid is purple and the berries start to burst

Bring it to a simmer and let it continue simmering until the blueberries burst, stirring occasionally to bring the blueberries on the sides of the pot to the center.

3. Strain.

Once the blueberries burst, the liquid will be a pretty purple color.

At this point, you can hold a mesh strainer over a mason jar or other container and pour the blueberry simple syrup over it, catching the liquid in the jar.

Discard the burst blueberries and refrigerate the simple syrup.

4. Serve and enjoy!

Serve this stirred into drinks, coffee, or even on baked goods or breakfast favorites.

There are so many uses for blueberry simple syrup!

Because of the fruit in this simple syrup, I don’t recommend storing it on the counter. It will go bad much faster.

For blueberry simple syrup it’s 1 cup of sugar to 1 cup of water. If you were making a rich simple syrup, you would use 2 cups of sugar to 1 of water.

Ingredients

  • 1 cup sugar granulated
  • 1 cup water
  • 1 cup blueberries

Instructions

  • Whisk the sugar and water together in a small saucepan over medium heat.

  • Keep whisking and cooking until the sugar dissolves.
  • Add the blueberries and bring the mixture to a simmer.

  • Let the mixture keep simmering until the blueberries burst and the liquid turns purple, about 5 minutes or so.
  • Remove from the heat.
  • Set a mesh strainer over a jar or container. Pour the blueberry simple syrup through the strainer into the jar, letting all the liquid drip out of the strainer.
  • Discard the blueberry solids left in the strainer.
  • Chill the simple syrup until ready to use and enjoy!
