Garlic Roasted Broccoli
Garlic roasted broccoli is a tasty choice of side dish for just about any main dish you plan to make. It is easy to make, quick and a totally delicious way to get everyone eating their veggies.

Roasted broccoli with garlic is the best way to make broccoli.
If you are not a fan of broccoli, my best is you have never had it cooked the right way.
You’ve probably only had sad boiled broccoli.
Well, my friends, roasting broccoli is a whole different ball game.
You won’t be suffering through limp broccoli (which sounds like a 90s, early aughts parody band).
Roasting any veggie caramelizes the sugar in the vegetable and mellows out any bitter flavor.
That’s exactly what happens to the broccoli.
Plus, unlike boiling, roasting gives the florets a slight crisp exterior and more tender- but not mushy- interior.
And the addition of garlic?
Well, garlic makes any savory dish better and adds a little bite of rich, sharp nuttiness.
And this side is amazing with any main from Easy Italian Grilled Chicken or Greek Chicken, it also levels up a pasta or stir fry.
Ingredients and Kitchen Supplies
Here’s what you need to prepare roasted broccoli with garlic:
- Broccoli Crowns – We prepared about 12 ounces of broccoli crowns. We short-cuted the process by using pre-cut crowns. You can cut your own if you like, though a bag of broccoli crowns saves some time and effort.
- Garlic – You’ll want about 4 to 6 cloves of fresh garlic either minced or pressed.
- Olive Oil – We use about two tablespoons of olive oil to coat the florets. This helps to broccoli to crisp up a bit in the oven.
- Salt and Pepper – You can omit both if you prefer.
- Parmesan Cheese (Optional) – You can add a bit of extra flavor with parmesan cheese or other cheeses if you like.
To roast the broccoli, you’ll want to have:
- Cookie Sheet
- Tongs or Large Spoon
- Large Mixing Bowl
- Foil (optional)
How to Make Garlic Roasted Broccoli
1. Prepare the broccoli and garlic.
Before doing anything, preheat your oven to 400 degrees.
If you got pre-cut broccoli crowns, you can dump them directly into your large mixing bowl.
You may want to cut larger florets in half or quarter them to be roughly the same size as smaller florets.
If you are cutting your own crown, try to make them pieces roughly even in size.
When the broccoli is in the bowl, add in the olive oil, garlic, salt, and pepper.
Use your tongs or spoon to toss the broccoli with the other ingredients until well-coated.
2. Bake the broccoli in the oven.
Prepare your baking sheet with aluminum foil and cooking spray if you desire.
Cooking spray will help prevent the broccoli from sticking to the sheet.
Spread the broccoli out so there is a bit of space between the florets to help with even baking.
Bake the broccoli for about 20 to 25 minutes or until the florets have softened and have slight browning.
3. Serve and enjoy!
Remove the broccoli from the oven and place in a serving bowl or on each plate when the broccoli and garlic start to turn brown to golden brown and the stems have softened.
Serve with your favorite main dish or as a weird healthy snack.

Roasted broccoli with garlic pairs well with pretty much any main dish.
If you plan to make stuffing stuffed chicken breasts, you can use it as a healthier sub for mashed potatoes.
You can also pair it with other roasted veggies, like carrrots or roasted red potatoes.

Storing Roasted Broccoli
You can make roasted broccoli ahead of time or store left overs in an airtight container once they are cool.
Place the container in the fridge or freezer.
They should stay fresh for about 3 days in the fridge or about 6 months in the freezer.
To reheat, thaw frozen broccoli and then either reheat in the microwave for a few seconds until they warm through.
You could also reheat in an oven set to 350 for about 5 to 10 minutes or until warmed through.
Tips and Tricks

- When preparing broccoli, cut larger florets either in half or quarters to make them all about the same size.
- Spray the tray with non-stick spray to help prevent them from sticking to the tray.
- Add on parmesan cheese, asiago cheese, ramano cheee, or your favorite harder cheese to add extra flavor and some crunch.
- Make sure to preheat your oven before placing the broccoli into it.
- While this is an excellent side, I highly suggest making it part of the main event if you plan to make a pasta like a creamy fettuccine alfredo instead of boiling or sauteeing it.

Ingredients
- 3 tablespoons olive oil
- 12 ounces broccoli
- 6 cloves of garlic
- 1 teaspoon salt and pepper
Instructions
- Preheat your oven to 400 degrees.
- As the oven heats, cut any larger broccoli florets in half or quarters to make roughly uniform sized florets.
- Toss the broccoli with olive oil, garlic, and a pinch of salt and pepper. If adding parmesan cheese, add it now.
- Spread the broccoli out on a prepared cookie sheet, preferably spraying with non-cook spray. Make sure to leave some space between florets.
- Place the broccoli florets in the oven and roast for 20 to 25 minutes or until the florets begin to brown and the stems soften.
- Serve with your favorite main dishes and other sides.
