No Bake Peanut Butter Chocolate Chip Granola Bars
You know those foods that are full of nostalgia and childhood memories? The ones that feel so cozy that eating them is like being 5 years old again? Well, these no bake peanut butter chocolate chip granola bars are one of those foods for me.
Definitely not a huge shocker. Chocolate and peanut butter are such a classic combination. But these granola bars remind me of the peanut butter chocolate chip granola bars that my Dad used to eat. Those granola bars were one of his favorite snacks. Well, being the absolute gourmet that my Dad was and really still is, he used to smear them with creamy peanut butter on top.
Really, truly genius. Especially to a little girl that wanted absolutely no parts of dinner particularly on beef stew nights. (Beef stew was definitely not my favorite.)
Well these granola bars are a throwback to those days. But I can argue that they are wholesome. You know, if you don’t count the chocolate chips. There is no oil, no sugar. A touch of honey sweetens these bars. Vegan? No big deal. Use maple syrup instead.ย Plus, you can keep them gluten free. Rather than using regular oats in the recipe, use gluten free oats. And you can use gluten free rice cereal as well.
Best yet? Well, these no bake peanut butter granola bars are so easy just like my no bake s’mores granola bars. No oven required. Just a microwave and fridge. Perfect for making homemade treats when you are feeling a little less than capable of baking.
And icing on the cake? The Goose loves them. Thank goodness. I feel pretty good about feeding these to her. And she eats them so I don’t wonder what is sustaining my kid. I suspect fairy dust and chocolate milk may be keeping her alive, but I can’t say for sure. Yesterday she ate only a lick of oatmeal. Literally, ONE lick, some chocolate milk, and she sniffed a banana. I think that may count.
So it’s time for me to make these again to get the Goose to eat. And hopefully, one day when she’s older these granola bars will taste like childhood and love to her too.
Ingredients
- 3 cups rolled oats
- 3 cups rice cereal
- pinch of salt
- 1 cup of peanut butter
- 2/3 cup of honey
- 1 tsp of vanilla
- 3/4 cup of mini chocolate chips
Instructions
- Toss together the rolled oats, rice cereal, and chocolate chips in a large bowl with a pinch of salt. Set aside. Add peanut butter into a microwave safe bowl. Microwave for 30 seconds and stir. Repeat until the peanut butter is melted. Add in the honey and vanilla. Stir thoroughly to combine. Pour the mixture over the cereal and oats mix. Stir until incorporated. Pour the mixture into a casserole dish lined with wax paper. Press down to form an even layer. Let set in the fridge for 1-2 hours. Cut into bars and enjoy.
Notes
To make the recipe vegan, use maple syrup and dairy free chocolate chips.
