Granola bars are a favorite in this house.

We go through tons of store bought ones and we love making them homemade because isn’t everything yummier homemade?ย 

This version turns one of our favorite treats (s’mores) into a yummy bar that you can make anytime of year- no campfire required!

In fact, you don’t even need a stove or an oven. This recipe is no bake and I use one of my kitchen mvps to melt the butter- the microwave.

This recipe is a fun one to make with the kids. My 5 year old loves cooking with us and this one recipe that she can do almost by herself. 

Almost. She needs a little help with measuring things and definitely can’t be left alone with the mini chocolate chips or mini marshmallows. But then again, who can be left alone with those items?

With no chopping, no sharp things and little opportunity to get burned, it’s a fun way to get the kids in the kitchen.

Ingredients

You probably have most of what you need to make these yummy treats in your pantry already. To make them you need

  • Rice Krispies
  • Oats– Go for rolled oats here and not steel cut for best texture.
  • Graham cracker crumbs– Save time and buy the box of graham cracker crumbs instead of making them yourself.
  • Mini marshmallows
  • Butter– Unsalted is the best for this, but salted will do too.
  • Mini chocolate chips

That’s it! I also highly recommend nonstick spray.

How to Make

Making these is super easy!


  1. Microwave the butter and most of the marshmallows.

Measure out 4 cups of mini marshmallows and put them in a microwave safe bowl with 3 tablespoons of butter. Microwave for a minute, or until the marshmallows puff up. Remove from microwave and stir.

Toss together the Rice Krispies, graham cracker crumbs and oats.

Use a separate bowl to mix the dry ingredients together. Pour this mixture into the melted marshmallows and butter. Stir until thoroughly combined.

Fold in the remaining mini marshmallows and the chocolate chips.

Make like David and Moira Rose and fold in the marshmallows and chips gently. Do this after the mixture has cooled for a minute or two so you don’t melt the marshmallows or chocolate.

After it’s been mixed.

Spoon the entire mixture into a baking dish coated with nonstick spray.

Let set for at least an hour prior to cutting into bars. Serve and enjoy!

Tips and Tricks

No Bake S'mores Granola Bars are a kid friendly, easy snack.
No Bake S’mores Granola Bars
  • This recipe works for a 9×13 baking dish and will make thinner bars. You can adjust the amounts for smaller sizes as listed in the notes section of the recipe card or use an 8×11 for thicker bars. Tastes delicious either way!
  • In the name of all that is good in the world, you MUST spray the baking dish. If you don’t want to use spray line your dish with a layer of parchment paper to make it easier to release the cut bars.
  • If you spray your hands and mixing spoon with cooking spray as well, it will help keep the mix from sticking to you and your spoon.
  • When you go to press the mix into the pan, kind of smoosh it down with your hands. Very technical.

Serving and Storing

Depending on your pan size, I like to cut these into 8 to 10 bars. Serve them on their own as a snack or even dessert. You can store them by wrapping the baking dish with aluminum foil and keeping any leftover bars there. You can also individually wrap them in foil or parchment and store them in a big zip lock bag on the counter. They will keep for 3 to 4 days.

  • 2 1/2 cups of Rice Krispies*

Keep the whole recipe gluten free by using gluten free Rice Krispies, gluten free oats, and gluten free graham crackers.
**The recipe above is for a 9×13 baking dish. To make in an 8×8 baking pan follow the same method but change the ingredient measurements as follows:
