Peaches and Cream Sweet Potato Toast Two Ways

What toppings should I put on sweet potato toast?
Any topping you can think of could go on sweet potato toast. You could go all basic hipster and top your toasts with avocado toast done in so many different ways. It would be delicious with avocado, a squeeze of lime, cilantro and chickpeas. You could also do a basic bruschetta topping sort of like I do in this bruschetta pasta or even a caprese toast. Mmmm that would be fab.
But, I feel like that’s all been done and I wanted to do something different with what I had on hand.
Enter this peaches and cream sweet potato toast done two ways.
The Sweet Option
Option one is for all the people out there that love something sweet in the morning. This option tops Sweet PotaTOASTS with ricotta, though you could also use marscapone or cream cheese, cinnamon, and grilled peaches. A drizzle of honey and sprig of mint completes the toast for a sweet breakfast or brunch treat you can feel good about eating.
The Savory Option
The savory peaches and cream sweet potato toast would be a delicious brunch or easy appetizer to put out for entertaining. This option uses the same grilled peaches and ricotta but instead tops them with a balsamic glaze and fresh basil. It’s like a sweet and smoky peach bruschetta. Delicious.
Do I really have to grill the peaches?
No, you can definitely put the sliced peaches on your sweet potato toast without taking the time to cook them on a grill pan. I did it because grilled peaches are extra yummy. The sugars in the peach caramelize and makes the peaches super sweet and just a little smoky which tastes so good with the slight smokiness of the roasted sweet potato toast. It makes it all kinds of extra delish.
Ingredients
- 1 bag of Sweet PotaTOASTS by the makers of CAULIPOWER
- about a cup of ricotta cheese divided into 1 tablespoon servings
- 1 peach sliced
- For the sweet option
- honey
- cinnamon
- mint leaves for garnish optional
- For the savory option
- 1/4 cup of balsamic vinegar
- 2 tbs honey
- basil leaves
Instructions
- Grill the peach slices on a hot grill pan sprayed with nonstick spray heated over medium to medium high heat. Flip each peach slice over after about 60 seconds and grill on the second side for an additional 30 seconds. Remove from heat and set aside.
- Prepare the Sweet PotaTOASTs according to the direction on the package. Let cool so the ricotta doesn't melt. Top each sliced sweet potato with about a tablespoon of ricotta. You may need to use a little more or a little less depending on the size of the slice. Then top with a grilled peach,
- For the sweet peaches and cream sweet potato toasts, sprinkle cinnamon and drizzle honey on each slice.
- For the savory peaches and cream toasts, make a balsamic glaze by adding a quarter cup of balsamic and two tablespoons of honey to a small sauce pan. Heat over medium low heat, stirring frequently, until the mixture reduces down and coats the back of a spoon, about 5 minutes. Drizzle the balsamic glaze over the peaches on the sweet potato toasts. Top with fresh basil leaves.
