Super Easy Smores Brownies

Easy smores brownies puts the flavors of the campfire treat right into your brownies. Loaded with toasted marshmallows, melted milk chocolate, and graham crackers, these are at the top of the list for any s’mores fan!

Of course you do!

I mean, really who doesn’t?

These moist, gooey smores brownies will make you look like a world-class baker.

No one needs to know they are semi-homemade.

And they are!

This easy recipe is one of my favorite ways to turn box brownie mix into something super special that my kids- and pretty much anyone who loves s’mores- loves!

Ingredients and Kitchen Supplies

Here’s what you need for some simple smore brownies:

  • Brownie Mix – Sure, you can make your own brownies, but it is also pretty simple to mix together a boxed brownie mix and call it day. You’ll also want the ingredients on the box normally an egg or two, oil, and water to mix the brownie mix (these are listed on the box).
  • Marshmallows – For ease, we recommend using minimarshmallows. If you use regular sized marshmallows, you will want to chop them into smaller pieces for the smores topping.
  • Milk Chocolate Chips – You could use Hershey’s chocolate bars, but we used milk chocolate chips to save some chopping time. If you do use bars of chocolate, you will want to chop them up to be smaller.
  • Graham Crackers – You can use your preferred brand roughly crushed or you can use graham cracker crumbs.

How to Make Smores Brownies

1. Prepare the brownies.

The first step is to preheat your oven to the recommended temperature on the brownie mix box.

This is often about 350 or 325 depending on the brand.

As the oven heats, you will want to prepare you brownie mix which generally invovles dumping the brownie mix, oil, egg(s), and water into a large mixing bowl and stirring to combine.

For added fun, you can mix in some small marshmallows or chopped large marshmallows into the batter once you have it all mixed up.

Spray a 9 x 13 baking dish with non-cook spray.

Scrap the brownie batter into the prepared baking dish, evenly distributing it along the bottom.

Bake the brownies for about 15 to 20 minutes.

They will not be quite done at this point, but the edges will be set and the center soft set and still jiggly.

2. Prepare the topping.

As the brownies heat, prepare the topping by rough chopping the graham crackers.

If using large marshmallows and bars of chocolate, you will also want to rough chop these.

Mix the chocolate, marshmallows, and graham crackers in a large mixing bowl.

3. Finish baking the brownies.

Remove the partially baked brownies from the oven.

Evenly spread the graham cracker, marshmallow, and chocolate mix over top of the brownies.

Place the brownies back into the oven and continue to bake for an additional 10 to 15 minutes or until a toothpick inserted into the center comes out clean.

Allow the brownies to cool completely before attempting to cut and serve.

Smores brownies are delicious on their own or go well with the treats you might serve any other brownies with.

Whipped cream and ice cream make two obvious choices.

You can also drizzle on caramel or chocolate sauce.

If you like, you can also serve them with strawberries or raspberries.

Storing

To store smore brownies, allow them to cool completely and then cover tightly with cling wrap or place them in an air tight container.

They should stay fresh for about 5 to 7 days on the counter.

In an air tight container, you could freeze them for up to 6 months.

Allow them to thaw overnigt before serving frozen smores brownies.

You can warm them before serving in the microwave for a few seconds.

Tips and Tricks

  • Allow the brownies to cool completely before attempting to cut or serve. This allows them to fully set so they are less likely to fall apart when serving.
  • Some brands of brownies have two recipes on the box- a cakey brownie and a fudgy brownie. For this recipe choose the cakey brownie recipe.
  • If you don’t have non-stick spray, you can rub butter or other fat all over the bottom and sides of the pan to help prevent sticking.
  • Do not bake the brownies the entire time with the smores topping. This will cause the marshmallows to dissolve and possibly burn the graham crackers and chocolate.
  • We use Hershey’s bars for a more authentic smores taste, but you could use chocolate chips or your favorite chocolate to make the smore topping for the brownies.

  • Place the chocolate chips, minimarshmallows, and chopped graham crackers into a large bowl and thoroughly mix together.
  • Remove the brownies from the oven (they will not be fully cooked yet).
  • Spread the chocolate, marshmallow, and graham cracker mix over the top of the brownies, evenly distributing it.
  • Place the brownies back into the oven and bake for an additional 10 to 15 minutes or until a toothpick inserted into the middle comes out clean.
  • Allow to cool before cutting and serving.
