This is my kind of pasta. It’s pretty much got the flavors of this easy bruschetta pasta without the wine and with creamy, gooey burrata cheese. It seriously checks all my boxes.

A big ball of creamy burrata. Fresh tomatoes. A big old handful of basil. A squeeze of lemon juice. So much garlic my Italian ancestors sing with delight.

Ok, maybe not that much garlic, but enough to add tons of flavor.

This tomato pasta with burrata is like the best Italian grown up version of macaroni and cheese I’ve ever eaten. And, I’m a huge cheese and pasta lover. Seriously if it’s a noodle and has cheese, I’m probably gonna love it. If it’s this spaghetti with sweet cherry tomatoes and creamy burrata, I might write poetry about it.

Profess my undying love. Potentially raise my children with it.

Watch out, husband, it is that good.

What is burrata anyway?

Burrata is basically fresh mozzarella stuffed with fresh cream. It’s very similar in taste but the cream gives it an extra richness and a soft center that fresh mozzarella doesn’t have. The result is a beautiful ball of cheese with a molten cream center. Think like the lava cake of the cheese world. You can normally find it in the specialty cheese case.

If you’ve never had it. Try it. It’s one of those ingredients that pairs so well with fresh tomatoes or even fresh fruit. Burrata would be killer with some sliced peaches like in this salad. Yum.

It’s also amazing in place of mozzarella in a Burrata Caprese Salad.

Of course, I think it would be amazing on its own drizzled with just a little olive oil.

I love to use burrata in pasta. I do it here with my pea pesto with burrata. You can use burrata in almost any pasta that has fresh mozzarella, however there are a few added applications for it.

Because of the creamy center that burrata has, if you pull it apart on top of hot pasta noodles the cream creates this gloriously creamy, cheesy sauce. Plus the outside layer of the burrata melts into the pasta and you have a whole melty delicious situation going on, which is exactly what you have here.

Because we’re using quality ingredients in this pasta, making it is super easy.

Just boil some spaghetti. While the spaghetti is boiling, halve a pint of cherry tomatoes. Set them aside and add olive oil to a large skillet over low heat. Press 4 cloves of garlic and add them to the oil. Just let it cook for about a minute until the oil gets fragrant. Then add the cooked pasta to the skillet with the olive oil and garlic and toss it. Add the tomatoes, a squeeze of lemon juice for freshness, and parmesan cheese. Then toss it together. The tomatoes shouldn’t cook, just warm slightly. Then finish it with lovely hunks of fresh burrata that you cut open and toss through the pasta and top with fresh basil.

And then you’ve got a delicious pasta.

Ingredients

  • 1/2 a pound of spaghetti
  • 3 tbs olive oil
  • 4 cloves of garlic pressed
  • juice of 1 lemon
  • 1/4 cup of Parmesan cheese
  • salt and pepper to taste
  • 8 ounces of burrata

Instructions

  • Cook the pasta according to the directions on the package.
  • When the pasta is almost done cooking, add 3 tbs olive oil to a large pan on low heat. Press 4 cloves of garlic into the pan and let warm until the garlic is fragrant but has not changed color or browned, about 30 seconds. Add the cooked pasta to the pan and toss. Add the lemon juice and Parmesan cheese. Toss again. Add the tomatoes and salt and pepper to taste. Gently toss to combine. Top with burrata, pulling the burrata apart so the inside creates a cheesy sauce. Finish with fresh basil to taste.
