Apple and Pear Kale Salad with Maple Dijon Vinaigrette

Ingredients

  • about 8 ounces of chopped rinsed kale
  • 2 apples thinly sliced
  • 1 pear thinly sliced
  • seeds of one pomegranate
  • 1/2 cup of sweet and spicy roasted pumpkin seeds
  • 1/2 cup of crushed walnuts

For the Maple Dijon Vinaigrette

  • 3 heaping tbs of Dijon mustard
  • 6 tbs maple syrup
  • 2 tbs balsamic vinegar
  • salt and pepper to taste

Instructions

  • Toss all the ingredients for the salad together. When salad is assembled, whisk all the ingredients for the salad dressing together until combined. Enjoy.
