Easy Grilled Zucchini

Super easy and delicious, grilled zucchini compliments just about any main dish you can think of, adding some healthy flavor the whole family will enjoy.

Equipment

  • 1 grill pan (or outside grill)

Ingredients

  • 1 large zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt, black pepper, and red pepper flakes (to taste, you can omit)

Instructions

  • Wash and dry your zucchini.
  • Cut off the ends of the zucchini.
  • Slice the zucchini into roughly 1/2 inch thick rounds.
  • Add zucchini, olive oil, and seasonings to a large mixing bowl.
  • Use tongs to carefully toss the zucchini to fully coat each piece in olive oil and seasonings.
  • Heat your grill pan to medium to medium-high heat.
  • Add the zucchini to the pan, leaving a small amount of room between each round.
  • Cook for about 2 to 3 minutes or until char lines appear.
  • Carefully flip each round and cook for an additional 2 to 3 minutes or until char lines appear.
  • Remove from heat and serve hot from the grill with your meal.
