Easy Tomato and Onion Salad with Vinegar

This easy tomato and onion salad with vinegar is full of fresh summer flavors like sweet tomatoes, onions, and basil. Everything is tossed with red wine vinegar and olive oil to bring it all together. The perfect light lunch, side dish or salad all summer long!

Ingredients

  • 1 medium red onion thinly sliced
  • 4 medium to large tomatoes chopped into bite sized pieces
  • ½ cup olive oil extra virgin
  • 1/2 cup red wine vinegar
  • 1/2 cup of fresh basil chopped
  • 3 cloves garlic minced or pressed
  • salt and pepper to taste

Instructions

  • Add the sliced onions and chopped tomatoes to a large bowl. Set the bowl aside.

  • In a second bowl or a large measuring cup, whisk together the olive oil, red wine vinegar, basil, and garlic until combined.

  • Pour the red wine vinegar mixture over the tomatoes and onions and toss everything together. Season with salt and pepper to taste.
