Grilled Chicken Caesar Salad

Ingredients

  • 1 cup Caesar dressing
  • 1 cup croutons
  • 2 heads romaine lettuce
  • 1 cup grilled chicken
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons Italian seasoning blend
  • 1 tablespoon garlic powder
  • 1/2 teaspoon salt and pepper
  • 1 cup parmesan cheese

Instructions

  • Cut the chicken breast into small chunks or leave whole.
  • Toss the chicken with lemon juice, olive oil, Italian seasoning blend, garlic powder, and salt and pepper until well coated.
  • Heat a grill pan over medium-high heat. If desired, spray with a nonstick spray.
  • Grill one side of the chicken for 3 to 4 minutes.
  • Flip the chicken and grill an additional 3 to 4 minutes or until the interior of the chicken reaches 165 degrees.
  • Remove from heat and let rest for a few minutes.
  • As the chicken rests, rinse and dry the romaine lettuce and toss with the dressing, croutons, and parmesan cheese in a large salad bowl.
  • Top the salad with the grilled chicken and more parmesan cheese and dressing if desired.
