- 1.5 pounds chicken breast
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/4 teaspoon salt and pepper
- 1/4 teaspoon red pepper flakes
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 3/4 cup sun dried tomatoes
- 3/4 cup parmesan cheese
- 1.5 cup heavy cream
- 4 cloves garlic
- 1 cup spinach
- 12 ounces farfalle or penne pasta
Prepare pasta according to the box's instructions, typically about 10 to 12 minutes in boiling water.
Slice the chicken into about 1 inch pieces.
As the water comes to a boil, heat olive oil and butter over medium heat in a large skillet.
Sautee the chicken with the butter, olive oil, and seasonings and crush garlic until it has cooked through and turned a gold brown on the outside.
Once the chicken is ready, add in the spinach and saute for about 1 minute. The spinach should start to wilt and turn dark green.
Pour the heavy cream into the skillet and allow it to come to a simmer and reduces slightly.
Once the pasta is done cooking, which shoud be about when you add in the cream, add the pasta into the skillet.
Turn off the burner and mix in the parmesan cheese.
Serve with your favorite bread and sides.
