Mini Caprese Skewers

Ingredients

  • 16 cherry or grape tomatoes
  • 8 ounces of mini mozzarella balls
  • 16 basil leaves
  • salt and pepper to taste
  • pesto or balsamic reduction
  • For balsamic reduction
  • 1/4 cup of balsamic vinegar
  • 2 tbs honey

Instructions

  • If needed, cut the mozzarella and tomatoes into manageable bite sized pieces.
  • Use a toothpick to skewer a tomato, folded basil leaf, and mozzarella. Repeat until you use all your supplies.
  • Sprinkle with salt and pepper. Serve with pesto or balsamic reduction.
  • To make balsamic reduction (optional):
  • Add balsamic vinegar and honey to a small saucepan set over low to medium low heat.
  • Cook until the mix comes to a simmer, stirring frequently.
  • After a few minutes, the balsamic will start to thicken. Once it coats the back of a spoon, it is ready.
  • Remove from heat and use a spoon to drizzle the reduction over the caprese skewers.
