These pesto chicken burgers use either shredded left over chicken breast or ground chicken. Either way makes for a delicious, juicy pesto burger that's sure to please your whole family.
1/2cupof shredded chicken or half pound of ground chicken
1egg
1/2cupbreadcrumbs
4clovesof garlic
1/2cuppesto sauce
1/2cupfresh basil leaves
1/2teaspoondry basil
1/2teaspoongarlic powder
1/2cupParmesan cheese
1pinchof red pepper flakes
4slicesof provolone or mozzarella cheese
For the aoli
1tablespoonof fresh lemon juice
1cupof mayo
1teaspoonsalt and pepper (to taste)
Instructions
Mix all the ingredients in a large mixing bowl. If using left over chicken, make sure to shred and de-bone it first.
Divide mixture into equal portions and then form into 4 patties. You can make smaller burgers if you like, dividing into more portions.
In pan or grill set to medium-high heat, spray with nonstick oil or grease with olive oil. Sear both sides of the patties, cooking each side for about 2 to 3 minutes or until browned.
If using shredded chicken, turn heat down and cook for about 2 to 3 minutes or until warmed through. If using ground chicken, turn heat down to low and cook for about 20 to 30 minutes, flipping occassionally. It needs to reach an internal temp of 165 degrees F.
Melt the cheese on the pesto burgers before serving on a toasted or regular bun.
Make the aoli as the pesto chicken burgers cook by combining the mayo, lemon juice, and salt and pepper in a small bowl.
Spread the mayo on the buns before adding the chicken burgers to them.
Notes
You can use homemade or store bought pesto sauce.When using pre-cooked chicken, you can significantly reduce the cook time.Make sure to cook ground chicken pesto burgers until they reach an internal temp of 165 degrees.
