Pesto Chicken Salad

Pesto chicken salad is an Italian twist on classic chicken salad and works perfectly in sandwiches, salads, wraps, and more.

Ingredients

  • 1.5 pounds chicken (cooked)
  • 1/2 cup mayo
  • 1/2 cup pesto
  • 1/4 cup diced walnuts
  • 1/8 cup fresh basil leaves
  • 1/4 teaspoon salt and pepper (to taste)

Instructions

  • Use two forks or a food processor to shred the chicken.
  • Add the chicken, pesto, mayo, walnuts, and basil leaves to a large bowl.
  • Using a spoon or tongs, thoroughly mix the chicken salad together.
  • Allow to rest in the fridge for about a half hour before serving or place in an airtight container and serve at a later time.
