Strawberry simple syrup is a 3 ingredient recipe that captures the sweet summer flavor of fresh strawberries in a syrup perfect for adding to drinks and baked goods.
Cut the tops off the strawberries and discard them. Quarter the strawberries. Set them aside.
Add the sugar and water to a small pot over low to medium low heat.
Whisk the sugar and water constantly until the sugar dissolves.
As soon as the sugar dissolves, add the strawberries into the pot.
Cook the mixture, not adjusting the heat, until the mixtures comes to a boil and simmers for about 5 minutes or until the strawberries release enough of their juices to turn the liquid red/pink. Stir frequently.
Let the mixture cool.
When the mixture is cool enough to safely handle, set a mesh strainer over a bowl, jar, or measuring cup. Carefully pour the simple syrup over the strainer to catch the solids.
Use a sturdy spoon to gently press down on the strawberry solids in the strain to release any trapped moisture. Discard the solids or save them to use as a chunkier preserve.
Store in a sealed jar in the fridge and use in your favorite baked goods or drinks. Enjoy!
