Ingredients

  • 1 cup strawberries hulled and cut
  • 1 cup sugar granulated
  • 1 cup water

Instructions

  • Cut the tops off the strawberries and discard them. Quarter the strawberries. Set them aside.
  • Add the sugar and water to a small pot over low to medium low heat.
  • Whisk the sugar and water constantly until the sugar dissolves.
  • As soon as the sugar dissolves, add the strawberries into the pot.
  • Cook the mixture, not adjusting the heat, until the mixtures comes to a boil and simmers for about 5 minutes or until the strawberries release enough of their juices to turn the liquid red/pink. Stir frequently.
  • Let the mixture cool.
  • When the mixture is cool enough to safely handle, set a mesh strainer over a bowl, jar, or measuring cup. Carefully pour the simple syrup over the strainer to catch the solids.
  • Use a sturdy spoon to gently press down on the strawberry solids in the strain to release any trapped moisture. Discard the solids or save them to use as a chunkier preserve.
  • Store in a sealed jar in the fridge and use in your favorite baked goods or drinks. Enjoy!
