Here’s what you need to make Caesar salad dressing without anchovies:

  • Mayo – We use full fat, regular mayo for Caesar dressing, but you can use light or lighter versions of mayo if you like.
  • Worcestershire Sauce – Good luck pronouncing it. On the outside chance you are allergic to anchovies and don’t just want to avoid dicing them up (gross), worestershire sauce does contain them, so you want to look for a vegan or anchovies-free version.
  • Parmesan Cheese – You want to use the grated stuff to help absorb some of the excess juice and liquid for a thicker, flavorful Caesar dressing.
  • Fresh Lemon Juice – We use the juice of one fresh lemon, which makes about 1/4 to 1/3 of a cup of lemon juice. You can use bottled lemon juice though if you prefer.
  • Garlic – We crush or mince about 4 to 6 cloves of garlic.
  • Dijon Mustard – Pardon me, but do you have any Grey Poupon? But of course! It does tend to have the best flavor, but you could use store brand or other brands of dijon mustard.
  • Black Pepper – This adds a tiny bit of spiciness to the Caesar dressing, but you can skip it if you prefer.

How to Make Our Homemade Caesar Salad Dressing Recipe

1. Prepare the ingredients.

Add all the ingredients to a large mixing bowl.

This really just invovles measuring out the ingredients and adding them to a large bowl.

For the garlic, we recommend using a garlic press.

For the lemon juice, a handheld juicer is a good option.

2. Mix and rest.

Once you measure out all of the ingredients, place them in a large mixing bowl.

Mix all the ingredients together until thoroughly combined.

If the dressing is a bit too watery or thin, mix in a small amount of parmesan cheese.

If the dressing is a bit too thick, you can thin it out with a bit more worestershire sauce or lemon juice.

In either case, only add a little bit at a time until it reaches a creamy consistency.

Keep in mind, the dressing will thicken some as it rests, so if it is a little watery when you first mix it, it should thicken up some as it rests.

Once well combined, cover and let it rest in the fridge for at least 30 minutes before using in a salad, wrap, or other recipe.

Tips and Tricks

  • This is a pretty straight forward dump and mix recipe. You can adjust the thickness by adding more parmesan cheese (to make it thicker) or adding in more worestershire sauce or lemon juice (to thin it out). Just make sure to add a very small amount and mix it in fully before adding more of either.
  • For added flavor, you can add in some fresh basil leaves. You will notice a slight hint of basil flavor if you do this, it is generally not over-powering. About 3 to 4 leaves is all you need to dice up and add.
  • Make sure to let it rest to allow time for the flavors to come together and for it to fully thicken. The grated parm cheese will help to suck in extra moisture, leaving a thicker dressing overall.
  • This is a delicious way to top Roasted Garlic Parmesan Brussel Sprouts with or Asparagus with Parmesan Cheese.
