If you’re craving something sweet but don’t want to spend all day in the kitchen, peach cobbler with cake mix is about to be your new best friend.
It’s one of those throw-it-together-in-minutes kind of recipes that somehow ends up tasting like grandma spent hours making it from scratch..
It’s the ultimate in summer desserts and perfect for all those sweet summer peaches since we have millions of peaches, peaches for me, millions of peaches, peaches for free.
And with fall baking right around the corner (hello pumpkin and apple- I see you!), this cake mix peach cobbler scratches the itch even though I decidedly don’t come from Georgia where the peaches grow.
(How many 90s songs with peach lines can I work into this?)
It gives cinnamon and brown sugar cozy and makes your home smell like fall while still being full of summer peaches.
What makes this dessert extra special is the way the cake mix bakes into a crispy, golden, buttery topping while the peaches get all caramelized and bubbly underneath.
It’s basically magic in a baking dish.
Serve it up with a scoop of vanilla ice cream, and you’ve got the ultimate comfort food.
This peach cobbler with cake mix hits the spot every time.
Ingredients and Kitchen Supplies
Here’s what you need for peach cobbler with cake mix:
- Peaches – In the summer when you can get them fresh, we use about 8 to 10. In the winter or times when you can get good fresh peaches, you can use about 2 cans worth of peaches, just make sure to drain them.
- Brown Sugar – This helps give the cobbler a thicker consistency and sweeter taste. It also helps the cake mix to brown nicely.
- Vanilla – This adds a nice background flavor to the peach cobbler.
- Cinnamon – This is optional but it does add a bit of extra cozy flavor.
- Corn Starch – The corn starch helps to thicken the filling of the cobbler.
- Yellow Cake Mix – You can use your favorite brand.
- Butter – This helps to give some richness and flavor to the cake mix topping.
You don’t need any special equipment for this. You will just want to have:
How to Make Peach Cobbler with Cake Mix
1. Prepare the peaches.
Cut fresh peaches into slices or chunks.
If you are using fresh, you can peel the peaches first or leave the skins on.
Toss the peaches with brown sugar, vanilla, cinnamon, and corn starch.
Spread the peach mixture into a 9×13 casserole dish, sprayed with nonstick spray.
2. Prepare the cake mix.
In a medium bowl, mix the cake mix with remaining brown sugar and melted butter until it forms clumps that look like wet sand.
Spread the prepared cake mix over the top of the peaches, covering as much as possible.
3. Bake the peach cobbler.
Bake the peach cobbler with cake mix on top for 1 hour.
At the end, it should have an even golden brown topping and be bubbling.
Serve with whipped cream, vanilla ice cream, or drizzle of caramel sauce.
Serving
Peach cobbler with cake batter plays really nicely with vanilla ice cream and whipped cream.
You might also like adding some caramel over top.
It is best when warm, so serve after about 15 minutes of resting or more.
If serving left overs, reheat for a few seconds in the microwave for a fresh from the oven cobbler taste.
Storing
To store, cover a cooled peach cobbler with plastic wrap or aluminum foil.
It should stay fresh for about 4 to 5 days in the fridge.
You may notice the topping becomes a bit less crisp the longer it sits.
Reheat in the microwave or oven to give it a fresh from the oven taste.
Tips and Tricks
- Cinnamon is optional, but cinnamon and peaches go very well together and give you that cozy vibe.
- You can use your favorite yellow cake mix. White cake and spice cake mix would also work really well.
- Reheat in the microwave or a warm oven when serving left overs.
- Make sure to let the cobbler rest at least 15 minutes after baking. This allows the peaches and sauce to set a bit and not be too watery. The longer it cools, the thicker the inside will get.
