It’s got a thick, gooey, sweet strawberry filling and a buttery, rich crumb topping.
And right out of the oven, maybe with a scoop of vanilla ice cream?
Ingredients and Kitchen Supplies
Here’s what you need for strawberry crumble:
- Strawberries – Fresh strawberries. Wash them, hull them, and slice them.
- Granulated Sugar – You use this to give the strawberries some added sweetness. As they bake, they tend to get a bit tart, so the sugar helps to give it a sweet tart taste.
- Corn Starch – Strawberries will release a lot of juices and we add just a bit of water to the berries. The corn starch helps to create a thicker filling for the crumble.
- Vanilla Extract – For some added flavor, we used vanilla extract.
- Water – Nothing fancy, just some water to help keep the strawberries from burning before they release their juices.
- Oats – Rolled or old fashioned oats work well in strawberry crumble. The oats get used as a topping for the crumble.
- Brown Sugar – You will need this for the topping.
- Baking Powder – This helps to enhance the texture of the crumble topping, making it lighter and crispier.
- Salt – A little bit of salt helps to balance flavors.
- Unsalted Butter – This turns the crumb topping into a decadent caramely treat.
- All Purposed Flour – The flour helps form part of topping for the crumble.
You do not need any fancy equipment to make strawberry crumble.

How to Make Strawberry Crumble
1. Prepare the berries.
Well, technically the first step is to preheat your oven to 350 degrees F.
As it starts to heat, wash and cut the stems off the strawberries.
Use your knife to cut larger berries into quarters and smaller ones into halves.
It doesn’t really matter which way you cut, but most of the time people cut from top to bottom.
Place the berries into a medium mixing bowl.
Add in the granulated sugar, corn starch, vanilla, and water.
Give it a quick stir to combine.
Spray your dish with non-stick spray to help prevent sticking or use butter to give it a good coating and then spread the strawberries over the baking dish.
Set aside as you prepare the crumble topping.
2. Mix and spread the crumble.
In a small mixing bowl, add the oats, brown sugar, baking powder, salt, and all purpose flour.
You may find using a fork or even potato masher helps to really mix the brown sugar into the other ingredients, but you want to get everything well mixed before adding the melted butter.
Once you melt your butter, pour it into the topping’s bowl and mix to combine.
When the topping is well-mixed, spread it over top of the strawberries.
3. Bake and serve.
Place the strawberry crumble into the oven and bake for about 30 to 40 minutes.
The crumble is done when it is bubbly and the topping has browned.
It will continue to thicken as it cools, so no need to wait for it to get really thick before removing from the oven.
Allow the strawberry crumble to cool for 5 minutes so the strawberry filling has a chance to thicken more before serving with whipped cream, ice cream, or other toppings.
Serving
Strawberry crumble is best served warm from the oven with only a little bit of cool down time.
In other words, you don’t want it to be super hot and burn everyone’s mouth, but you do want it warm when you serve it.
Some toppings you can try include:
- whipped cream
- vanilla ice cream
- walnuts or other nuts
- cut strawberries
Storing
Whether you have leftovers or just plan to bring it to a party, store cooled strawberry crumble tightly covered in the fridge.
It should last about 3 to 5 days in the fridge.
We don’t recommend freezing the crumble since freezing changes the texture,
To serve leftovers, you can pop a serving in the microwave or enjoy it cool.
Tips and Tricks
- Don’t use frozen strawberries. The moisture content is different and frozen strawberries may give you a soupy filling.
- You can make this dish sweeter, adding more sugar, less sweet, adding less sugar, or use no calorie sweeteners if you prefer.
- This is delicious as is but if you want some crunch for texture mix half a cup of chopped walnuts into the topping.
- When the strawberry crumble is ready, the filling will be bubbly and starting to look thick. You don’t want to pull it out of the oven until the filling bubbles.

Ingredients
- 2 pounds strawberries
- 2.5 tablespoons corn starch
- 1/3 cup granulated sugar
- 2 tablespoons water
- 1 teaspoon vanilla extract
For topping
- 1 cup rolled or old fashioned oats
- 1/2 cup all purpose flour
- 1/2 teaspoon baking powder
- 3/4 cup brown sugar loosely packed
- 1/4 teaspoon salt
- 8 tablespoons butter (1 stick)
Instructions
- Preheat your oven to 350 degrees.
- As it heats, clean and remove the stems from the strawberries.
- Quarter larger berries or half smaller berries and add either directly to a medium mixing bowl
- Add in the corn starch, water, vanilla extract, and granulated sugar to strawberries.
- Give the strawberries a quick stir to combine the ingredients and then spread across a baking dish coated in non-stick spray.
- In a small bowl, mix all the ingredients for the topping except for the butter. You might find it helpful to use a fork or potato masher to get it well combined.
- After you get the dry ingredients together, pour in the melted butter and work that into the topping.
- Spread the topping over the strawberries.
- Place the baking dish into the oven and bake for 40 to 50 minutes or until the topping has browned and strawberries are bubbly.
- Allow to cool for a few minutes before serving with ice cream, whipped cream, or more strawberries on top.
