Ingredients
- 2 pounds strawberries
- 2.5 tablespoons corn starch
- 1/3 cup granulated sugar
- 2 tablespoons water
- 1 teaspoon vanilla extract
For topping
- 1 cup rolled or old fashioned oats
- 1/2 cup all purpose flour
- 1/2 teaspoon baking powder
- 3/4 cup brown sugar loosely packed
- 1/4 teaspoon salt
- 8 tablespoons butter (1 stick)
Instructions
- Preheat your oven to 350 degrees.
- As it heats, clean and remove the stems from the strawberries.
- Quarter larger berries or half smaller berries and add either directly to a medium mixing bowl
- Add in the corn starch, water, vanilla extract, and granulated sugar to strawberries.
- Give the strawberries a quick stir to combine the ingredients and then spread across a baking dish coated in non-stick spray.
- In a small bowl, mix all the ingredients for the topping except for the butter. You might find it helpful to use a fork or potato masher to get it well combined.
- After you get the dry ingredients together, pour in the melted butter and work that into the topping.
- Spread the topping over the strawberries.
- Place the baking dish into the oven and bake for 40 to 50 minutes or until the topping has browned and strawberries are bubbly.
- Allow to cool for a few minutes before serving with ice cream, whipped cream, or more strawberries on top.
