There is something immensely satisfying about summer tomatoes.

They are a million times yummier during the warmer months.

And maybe it’s because my Italian heritage runs deep, but I love eating them all summer long on toast, in pastas, on salads, in salads like this Italian Cucumber Tomato Salad, or just sliced with an ear of corn for lunch.

One of my favorite summer lunches and salads is definitely this tomato and onion salad with vinegar.

It’s sweet, a little tangy from the vinegar, and tastes like summer sunshine.

The tomato salad is light enough for even the hottest days but so satisfying- especially when you serve it with a piece of good bread or two to dip in all the dressing.

  • Tomatoes– Use a sweet flavorful variety of tomatoes like roma tomatoes, plum tomatoes, or real any vine ripened summer tomatoes cut into small pieces. You could also substitute halved cherry or grape tomatoes if you prefer.
  • Onion– Use a sweeter milder onion like red onion or a candy onion. Slice it thinly.
  • Basil– Chopped into ribbons or pieces.
  • Olive oil– Don’t substitute another kind of oil. You want the mild fruitiness from the olive oil.
  • Vinegar– Red wine vinegar
  • Garlic– Fresh garlic cloves are optional but highly recommended.
  • Salt and pepper– To taste

1. Cut the tomatoes and onions.

  • 1 medium red onion thinly sliced
  • 4 medium to large tomatoes chopped into bite sized pieces
  • ยฝ cup olive oil extra virgin
  • 1/2 cup red wine vinegar
  • 1/2 cup of fresh basil chopped
  • 3 cloves garlic minced or pressed
  • salt and pepper to taste
