My kids mostly ignore me when I am working on recipes for the blog. By mostly, I mean my toddler likes to rearrange my lights and pull out all the pots and pans and put them on the floor. My 5 year old will help me style my recipes sometimes but again, she’ll mainly do her own thing.
That’s mostly how it goes.
Until I pulled out the bag of marshmallows. My children swarmed me the way the raptors swarmed around Chris Pratt in the scene from Jurassic World. Come on, you know exactly which scene I am talking about. I think though the raptors were a little more refined because the toddler legitimately stole the bag of marshmallows out from my hand and toddled off with it, leaving a trail of marshmallows in his wake.
So suffice it to say: my kids LOVE these s’mores Rice Krispie treats. And so do I! They combine the classic goodness of regular Rice Krispie treats with the flavors of s’mores. No campfire required!
Ingredients
You don’t need a lot to make this. The ingredients are very similar to those in my no bake s’mores granola bars only you don’t use any rolled oats.
- Butter
- Marshmallows- Go for mini marshmallows instead of the big ones and make sure you have extra!
- Rice Krispies
- Graham Cracker Crumbs
- Chocolate Chips- Mini semi sweet chocolate chips work best. The milk chocolate version will melt too much into the treats.
How to Make
First, start by shooing away any of the raptor like creatures that are chomping at you to get the marshmallows and tell them to chill out. You may have to toss some marshmallows their way.
Then put the butter and 4 cups of mini marshmallows into a large microwave safe bowl.
Microwave it for about a minute or until the butter is melted and the marshmallows are puffed up.
Stir until the marshmallows are deflated, smooth and the butter is well incorporated.
Pour in the Rice Krispies and the graham cracker crumbs.
Stir until everything is combined.
Let cool briefly and then mix in the remaining marshmallows and chocolate chips.
Press into a sprayed 9×13 pan.
Let them cool and then cut into squares.
Enjoy!
How to Keep the Extra Chocolate and Marshmallows from Melting in the Treats
Keeping the extra chocolate and marshmallows that you will stir into the treats has two tricks to it:
- Let the cereal, graham cracker crumb and marshmallow mix cool first. Don’t let it cool for too long so it sets but you don’t want it to be hot to the touch. Stirring it will help cool it some. I let mine sit on the counter for a few minutes before I fold in the marshmallows and chocolate chips.
- Work with chilled chocolate chips and marshmallows. I froze the chocolate chips for about 15 minutes prior to folding them into the treats. The marshmallows hung out in the fridge during this time. I didn’t cool all the marshmallows- only the extra cup that you will stir in.
Tips and Tricks
- You can make this using the stove if you prefer. Just melt the marshmallows and butter together over in a saucepan over medium low heat. Then pour in the cereal and graham mixture.
- Say it with me: USE COOKING SPRAY LIBERALLY. Spray the baking dish, spray your hands and spray your spoon. It will help prevent the mixture from sticking.
- Top the treats with extra mini marshmallows, chocolate chips and graham cracker crumbs. Do this when the treats are still slightly warm.
Serving and Storing
Store this on your counter covered tightly with plastic wrap or foil for 2 days. After 2 days, they will dry out a little.
